To say that we fell in love with Strata and Simcoe as a combination when we first used it earlier in the year would be the understatement of the century. An initial experiment into seeing what what the most potent flavour combination we could possibly pack into a smashable pint-focused beer bears fruit again with Is It Over. After keeping the ABV purposely low on our last effort with this combo, Chasing Lights, we’ve nudged the strength of this beer up and the results are phenomenal. A crisp bitter base plays off biscuity sweetness from our Polly’s grist bill, whilst our dry hop bill of a stalwart hop here at the brewery in Simcoe, and new brewing industry darling Strata bring a tropical punchbowl of apricot, berry and passionfruit, backed up with that distinctive thick Amsterdam coffee shop smoke aroma.
