What happens when a trio of the best and most exciting breweries from Wales, England, and Scotland are brought together for a collaboration? Daft, silly DIPAs happen is what. After working with each brewery separately in recent months, we were brought together by craft beer subscription service Brewser for the Ultimate Collaboration - a three way dance of some of the best juice slingers in the country throwing their collective ideas into the hat. Utilising Polly’s ultra-soft water profile, we leant on the expertise of Sureshot’s founder James Campbell who suggested we utilise a new to us technique of mash hopping with Cascade to really accentuate the fruit forward flavours of our dry-hop charge. At a refined but still potent 19g/l, Overtone chose to go with Cashmere, El Dorado and Nelson Sauvin on the cold side to create an outrageously dank, sticky, juicy DIPA up there with some of our collective best efforts.
